RAMADAN & ÇÖKERTME KEBAB

Welcome to the month of Ramadan! Does anyone know where the name "Ramadan" comes from? We look forward to it every year, but do we know what it means?


To be honest, I learned from the author of a book I read last year. And until that day, it had not come to my mind to research and learn. After all, our Lord could not have just given an ordinary name to this month. In my opinion, the name might have hidden secrets, wisdom and meanings intertwined. Ramadan means that the rain falls and the dust is cleaned at the end of summer, which basically signals the beginning of the fall season. That rain is called Ramadan. Just as this rain washes the earth, the month of Ramadan also washes the hearts of its believers. As a result, we could imagine that equal to the cleansing through the rain, our hearts are being cleansed through fasting.


ÇÖKERTME KEBAB

INGREDIENTS (for 5 people)

ÇÖKERTME KEBAB

- 750 gr. of beef fillet (finely cut)

- 3-4 pieces of potatoes


- 1 dried onion (finely cut)

- 3 tablespoons of olive oil

- cumin, powdered paprika, salt, thyme

- tortilla bread

- 5 tomatoes (peeled)

- 5 cloves of garlic (crushed)

- 2 tablespoons of olive oil


PREPARATION

First of all, place the tortilla breads in your oven-temperature-resistant bowls as you can see in the image and apply oil on all sides with a brush. Bake in an oven at 200C * until it is browned and hardened. Put the chopped potatoes into ice water.


Put the pot on the stove, turn on the low heat and add the oil. Add the meat into it, mix and cook on low heat with the lid closed until it releases its water and absorbs it again.

Add the onions and fry for about five minutes, add half a glass of water and cook until the water is absorbed. Add the spices, mix and remove the pot from the heat.

Drain the potatoes, dry them well and fry them in hot oil. Take the fried potatoes on a paper towel and sprinkle with salt. Fill your tortilla bread bowls with fried potatoes, yoghurt, meat and sauce.

For the tomato sauce: Puree the tomatoes in the mixer and put them inside a pot. Take the pot to the stove. Add oil, salt and garlic and cook on low heat for about 30 minutes.
